Directions
Step 1: Prepare the Masala
In a bowl, add yogurt, salt, black pepper, ginger-garlic paste, chaat masala powder, cumin powder, crushed coriander, garam masala and turmeric powder. Mix well until combined. Set aside.
Step 2: Marinate the Chicken
Make deep cuts in the chicken pieces. Add salt, vinegar and ¼ cup of the prepared masala. Coat the chicken thoroughly and marinate for 2–3 hours.
Step 3: Smoke the Chicken
Place a small piece of hot coal in a heatproof bowl inside the marinated chicken. Add a few drops of oil over the coal, cover immediately and let the chicken smoke for 2–3 minutes.
Step 4: Grill the Chicken
Heat a grill pan and grill the marinated chicken on each side for 3–4 minutes.
Step 5: Cook on the Tawa
Heat 2 tsp oil in a pan and fry the grilled chicken for 4–5 minutes, turning occasionally.
Step 6: Add the Masala
Pour the remaining prepared masala over the chicken and cook until the excess water dries out. Add chopped green chillies and lemon slices. Cook for about 4 minutes, or until the chicken is completely cooked, gently shredding it with a metal spatula as it cooks.
Step 7: Garnish & Serve
Garnish with fresh coriander, green chillies and lemon. Serve hot with naan or roti.
