Tips for Extra Crispy Sweet and Spicy Honey Wings

  • Pat the chicken wings completely dry with paper towels before marinating to remove excess moisture and help achieve a crispy coating.
  • Marinate the chicken wings for at least 15 minutes to allow the ginger-garlic paste and spices to develop their flavor.
  • Mix the flour, red chilli powder, and salt thoroughly to create an evenly seasoned coating.
  • Coat each wing thoroughly with the seasoned flour, making sure all sides are covered, and shake off any excess flour.
  • For an extra crispy coating, let the flour-coated wings rest on a wire rack for 5–10 minutes before frying.
  • Fry the wings in small batches to avoid overcrowding the wok and lowering the oil temperature.
  • Maintain a steady frying temperature over medium to medium-low heat so the wings cook evenly without burning the flour coating.
  • Check that the thickest part of the chicken reaches an internal temperature of 165°F (74°C) before serving.
  • Cook the honey BBQ sauce over low heat until smooth and slightly thickened. Avoid overheating it because the honey and brown sugar can burn.
  • Adjust the honey, hot sauce, and crushed red chilli to achieve your preferred balance of sweetness and heat.
  • Toss the fried wings in the warm honey BBQ sauce just before serving to coat them evenly.
  • Don't leave the wings in the sauce too long, or the crispy flour coating will soften as it absorbs moisture.
  • Serve immediately while the wings are hot, crispy, and coated in the sticky, sweet-and-spicy glaze.
