- Vanilla extract — 1 tsp ((optional))
INGREDIENTS FOR SERVING
- Cheri’s Prickly Pear Cactus Syrup — as needed ((optional))

- Whipped cream — as needed ((optional))
Directions
Step 1: Prepare the Crust
Preheat the oven to 325°F (163°C). Combine graham cracker crumbs, sugar, melted butter and optional pecans in a mixing bowl. Mix until evenly moistened. Press firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 8–10 minutes, then set aside to cool slightly.
Step 2: Prepare the Pan
For a water bath, wrap the outside of the springform pan with two or three layers of heavy-duty aluminum foil, covering the bottom and sides to help prevent leaks. Place the wrapped pan inside a large roasting pan.
Step 3: Prepare the Cheesecake Filling
Using an electric hand mixer or stand mixer, beat the softened cream cheese on medium-low speed until smooth and creamy. Gradually add the sugar and mix until combined. Add vanilla extract and lemon juice. Add the eggs one at a time, mixing on low speed just until incorporated. Avoid overmixing to reduce excess air in the batter.
Step 4: Fill the Crust
Pour the cheesecake filling over the prepared crust and smooth the top with a rubber spatula.
Step 5: Bake the Cheesecake
Place the roasting pan in the oven. Carefully pour hot water into the roasting pan until it reaches about halfway up the sides of the springform pan. Bake at 325°F (163°C) for 50–60 minutes, or until the edges are set and the center still has a slight wobble. Avoid opening the oven door frequently.
Step 6: Cool Gradually
Turn off the oven and leave the cheesecake inside with the door slightly open for 30 minutes. Carefully remove the roasting pan from the oven, then lift out the springform pan. Allow the cheesecake to cool further.
Step 7: Prepare the Prickly Pear Topping
Combine sour cream, Cheri’s Prickly Pear Cactus Jelly and optional vanilla extract in a mixing bowl. Stir until smooth and evenly colored.
Step 8: Add the Topping
Carefully spread the prickly pear sour cream mixture over the cheesecake. Return it to the oven at 325°F (163°C) for 5–7 minutes to help set the topping.
Step 9: Cool and Refrigerate
Remove the cheesecake from the oven and cool completely on a wire rack. Run a thin knife around the inside edge of the pan to help prevent the cheesecake from sticking as it contracts. Cover and refrigerate for at least 4 hours, preferably overnight, before removing the springform pan sides.
Step 10: Garnish and Serve
Drizzle each slice with Cheri’s Prickly Pear Cactus Syrup, if desired. Add fresh berries or whipped cream for extra presentation. Slice with a sharp knife dipped in warm water, wiping the blade between cuts.
Tips for the Perfect Prickly Pear Cheesecake
- Use room-temperature cream cheese and eggs to create a smooth, creamy filling.
- Mix the batter on low speed after adding the eggs to avoid incorporating excess air.
- Bake in a water bath for gentler, more even heat and to help reduce cracks.
- Do not overbake; the edges should be set while the center still has a slight wobble.
- Cool the cheesecake gradually in the switched-off oven with the door slightly open.
- Run a thin knife around the inside edge of the pan to help prevent cracks as the cheesecake cools.
- Refrigerate for at least 4 hours, preferably overnight, for the best texture and clean slices.
- Stir prickly pear cactus jelly into the sour cream until smooth for an evenly colored topping.
- Drizzle prickly pear cactus syrup over individual slices just before serving for extra fruity flavor.
- Store leftover cheesecake covered in the refrigerator for up to 4 days.
