Pickled Smash Beef Burger

Ingredients

PICKLED BURGER SAUCE

  • mayonnaise — ½ cup
  • hot sauce — 1 tbsp
  • mustard paste — 1 tbsp
  • tomato ketchup — 3 tbsp
  • Worcestershire sauce — 1 tsp
  • finely chopped pickled cucumber — 1–2 tbsp
  • finely chopped onion — 2–3 tbsp

SMASH BURGER PATTIES

  • beef mince — 650 g (15% fat)
  • Butter, as needed
  • Burger buns
  • cooking oil — 1–2 tbsp
  • Salt (to taste)
  • Crushed black pepper (to taste)
  • Cheddar cheese slices

ASSEMBLING

  • Prepared pickled burger sauce
  • Lettuce leaves
  • Tomato slices
  • Onion rings
  • Pickled jalapeño slices

Directions

  1. Step 1: Prepare the Pickled Burger Sauce

In a bowl, add mayonnaise, hot sauce, mustard paste, tomato ketchup, Worcestershire sauce, pickled cucumber, and chopped onion. Mix well and set aside.

  2. Step 2: Prepare the Smash Burger Patties

Place the beef mince in a bowl. Take approximately 75 g of mince and shape it into a ball. Repeat to make 8 meatballs. Place the meatballs on a tray and refrigerate for 15 minutes. Heat a cast-iron hot plate and grease it with butter. Toast the burger buns until lightly golden and set aside. Grease the hot plate with cooking oil. Place the meatballs on the hot plate and cover each with a piece of butter paper. Using a flat, heavy spatula or burger press, smash the meatballs as thin as possible. Season with salt and crushed black pepper. Spread about 1 tbsp of the prepared pickled burger sauce over each patty. Cook until the bottom is nicely charred, then flip and cook until golden brown. Place a cheddar cheese slice on each patty and cook until the cheese melts. Stack one cheesy patty over another.

  3. Step 3: Assemble the Burger

Spread the prepared pickled burger sauce over the bottom bun. Add a lettuce leaf, tomato slices, and onion rings. Place the stacked smash burger patties on top. Add more pickled burger sauce and pickled jalapeño slices. Cover with the top bun. Serve your Pickled Smash Burger with chilled 7Up.
