Directions
Step 1: Sauté the Vegetables
Heat 2 tablespoons of oil in a pan. Add the chopped onion and capsicum. Cook for 2–3 minutes until slightly softened.
Step 2: Add the Chicken
Add the boiled, shredded chicken and mix well with the vegetables.
Step 3: Add Flour
Sprinkle 2 tablespoons of flour over the chicken mixture. Stir continuously for 1–2 minutes.
Step 4: Add Milk and Chicken Stock
Gradually pour in the milk and chicken stock while stirring. Cook until the mixture thickens.
Step 5: Season the Filling
Add salt, black pepper, red chilli flakes, oregano and garlic powder. Mix well and cook until the filling becomes thick and creamy.
Step 6: Add Mayonnaise
Turn off the heat and let the filling cool slightly. Add mayonnaise and mix well. Allow the filling to cool completely before using.
Step 7: Prepare the Dough
In a bowl, mix the flour, sugar, salt and yeast. Add the oil and enough warm water to make a soft dough. Knead for 8–10 minutes until smooth.
Step 8: Let the Dough Rise
Cover the dough and leave it in a warm place for about 1 hour, or until it doubles in size.
Step 9: Roll and Cut
Roll the risen dough into a thin sheet on a lightly floured surface. Using a knife, cut it into equal-sized squares.
Step 10: Add Ketchup
Spread a little ketchup in the centre of each dough square.
Step 11: Add the Chicken & Cheese Filling
Place a portion of the prepared chicken and cheese filling over the ketchup in the centre of each square.
Step 12: Fold the Corners
Fold the left and right corners of each square upwards towards the centre to create a decorative, open box shape. Gently press the folds to help them stay in place.
Step 13: Add Black Olives
Place one black olive on top of each bite, near the folded corners.
Step 14: Bake
Arrange the bites on a baking tray lined with parchment paper. Bake in a preheated oven at 180°C (350°F) for 15–20 minutes, or until the dough is golden brown and fully cooked.
Step 15: Serve
Remove from the oven and allow the bites to cool slightly. Serve warm with ketchup or garlic mayonnaise.
Tips for Perfect Baked Chicken Bites
- Keep the chicken filling thick and creamy so it stays inside the dough bites during baking.
- Allow the chicken filling to cool completely before assembling the bites to help prevent the dough from becoming soggy.
- Cook the onion and capsicum until slightly softened before adding the chicken for a flavorful filling.
- Add the milk and chicken stock gradually while stirring to prevent lumps from forming in the sauce.
- Mix the mayonnaise into the filling after removing it from the heat, once the mixture has cooled slightly.
- Use warm, not hot, water when preparing the yeast dough to help the yeast work properly.
- Knead the dough until smooth and elastic, then cover and let it rise until doubled in size.
- Roll the dough evenly so the bites cook at a similar rate and develop a golden-brown exterior.
- Avoid overfilling the dough squares, and press the folded corners gently into place to help hold the filling.
- Leave a little space between the bites on the baking tray to allow heat to circulate evenly.
- Bake in a preheated oven at 350°F (180°C) until the dough is golden brown and cooked through.
- Watch the bites toward the end of baking, as smaller pieces may cook faster than larger ones.
- Let the bites cool slightly before serving, and enjoy them warm with ketchup or garlic mayonnaise.
