Ingredients
Ingredients
- vegetable oil — 1 cup (for frying)
- avocados — 3 (diced)
- red onion — ¼ cup (diced)
- Roma tomato — 1 (diced)
- fresh cilantro leaves — 3 tbsp (chopped)
- garlic powder — 1 tsp
- Juice of 1 lime
- Salt and black pepper (to taste)
- egg roll wrappers — 8
Directions
Step 1: Heat the Oil
Pour the vegetable oil into a large skillet and heat over medium-high heat.
Step 2: Prepare the Avocado Filling
Place the diced avocados in a medium bowl and mash to your desired consistency. Add the red onion, diced tomato, chopped cilantro, garlic powder, lime juice, salt, and black pepper. Mix gently until combined.
Step 3: Fill the Wrappers
Place an egg roll wrapper on a clean work surface with one corner pointing toward you. Spoon some avocado filling into the center of the wrapper.
Step 4: Fold and Seal
Lightly moisten the edges of the wrapper with water. Fold the bottom corner over the filling, fold in both sides, and roll tightly. Press the edges to seal securely. Repeat with the remaining wrappers and filling.
Step 5: Fry Until Golden
Carefully place the egg rolls into the hot oil. Fry for approximately 2–3 minutes, turning as needed, until golden brown and crispy on all sides.
Step 6: Drain and Serve
Remove the egg rolls using metal tongs and place them on a paper towel-lined plate to drain excess oil. Serve immediately with your favorite dipping sauce.
Tips for Crispy Avocado Egg Rolls
- Choose ripe but firm avocados for a creamy filling that holds its texture without becoming too watery.
- Add lime juice immediately after mashing the avocados to help slow browning and add fresh citrus flavor.
- Dice the tomato and red onion finely to distribute the ingredients evenly throughout the filling.
- Avoid overfilling the wrappers so you can roll them tightly and seal the edges securely.
- Moisten the wrapper edges with water and press firmly to help prevent the filling from leaking during frying.
- Heat the oil to approximately 350°F (175°C) for a crisp, golden-brown exterior.
- Fry in small batches to avoid overcrowding the skillet and lowering the oil temperature.
- Drain the egg rolls on a paper towel-lined plate and serve immediately for the best crispy texture.
- Serve with ranch dressing, creamy garlic dip, or your favorite dipping sauce for an easy homemade appetizer.
- For party prep, chop the vegetables and cilantro ahead of time, but prepare the avocado filling close to serving to help preserve its fresh color.
